Protein Balls

A recipe for no-bake protein balls I got from a sister on Bariatric Bad Girls page on FB.  I recently bought the PB2, and need to make some chocolatey recipes for protein + replace actual CHOCOLATE and chocolate chip cookies I *need* about twice a month (to avoid killing people). PB2 (chocolate or regular), 1/2c + water as needed to make it to peanut-butter consistency, about 1/4 c. Rolled oats, 1/2 c H oney, 2 Tbsp 3/4 cup protein powder of your choice Vanilla extract, splash + any other flavorings you like (Sometimes I use Torani sugar free syrups instead of vanilla extract & subtract the honey...adjust to taste) Directions Mix all ingredients together very well, roll in hands into 2 cm balls, then freeze them. DELISH! Serving Size: Makes 24 balls If you freeze them on a cookie sheet or pizza pan, after they are frozen you can put them in a freezer bag for easy access. I eat 2 or 3 for a snack.

Microwave popcorn- NO PAPER BAG version

So excited!  I've been trying to make homemade microwave popcorn in brown paper bags, but it only makes a tiny amount for me at a time, and usually there's a lot of kernels left over and/or burnt popcorn in the middle. So I've looked and looked around online for a recipe not using paper bags, found a few and combined a few. Here's what I'm doing (and it works!) I use: 10 cup microwave safe glass bowl vented microwave cover (has to be vented or the bowl can explode, I heard) 2 TBSP butter sea salt 1/3 cup popcorn kernels I just made it melting the butter first, then add the salt and popcorn and swirl around to make sure it's all coated.  Put the vented lid over the top, micro for 3-4 minutes (mine takes 3 mins 20 seconds) until there's 1-2 seconds between pops.  Done! USE POTHOLDERS or a towel or something to remove from microwave- it will be EXTREMELY HOT for a LONG TIME after it's finished.  Both my kids had 2 bowls of it, pronounced it ...

No Tahini Black Bean Hummus

I started making this a couple years ago (I guess it was), because I like black beans, I like hummus, I didn't have any tahini, and tahini costs too much for me to buy it.  I really like this recipe, and I sometimes add additional/different spices, or leave out some.  Depending on my mood.  15 oz can black beans (drained and rinsed) 15 oz can chick peas (garbonzo beans) (drained and rinsed) 2 cloves of garlic (or somewhere thereabouts) 1-2 TBSP of olive oil 2 TBSP lemon or lime juice 2 tsp cumin 2-3 tsp cilantro (I *LOVE* cilantro, you should adjust according to your likes) 1 tsp or so of sea salt 1 tsp or so of ground chipotle pepper Put it all in the food processor or blender, and blend til smooth.  That is all.  Don't take it to any parties if you don't want your friends requesting it every time there's a get together :)

Granola

made this today, just trying to keep track of ingredients(ish) so I'll know what I've tried.... ½ cup local honey ¼ cup agave nectar ½ cup brown sugar ¼ cup coconut oil 1 tablespoon molasses Heated that in the microwave until the coconut oil was melted... In a large glass bowl: 4 cups oats 2 tsp cinnamon ½ cup unsweetened applesauce 1 tsp vanilla Pour in heated mixture and mix it up.  Then I added 3 scoops Nectar unflavored protein pow der.  Mixed it all toget her, spread on jelly roll pan, baked at 325 °f for 15 minutes.  Then turn ed it all over, and baked another 10-15 minutes. After it cool ed I needed my husband to crack it, and put it in a tupperware cereal container with dried mixed fruits and raisins. ....

Apple Pie I made for Thanksgiving

I looked up Pioneer woman's apple pie recipe ,  but I'm allergic to nuts and  her's didn't have spices in it, so I fixed it and made it this way.  It is strongly based on Ree's recipe though... :)  I may even add the caramel topping, but haven't decided yet. Apple Pie Ingredients   1 whole Pie Crust   6 cups (to 7 Cups) Peeled And Sliced Granny Smith Apples   ½ whole (juice Of) Lemon   ½ cup Sugar   4 Tablespoons Flour   ¼ teaspoon Salt 1 tsp cinnamon ½ tsp nutmeg  Topping   ½ cup Flour   1 ½ stick Butter   1 cup Brown Sugar   ½ cup Quick Oats   ¼ teaspoon Salt ½ tsp ground cloves   Preparation Instructions Preheat oven to 375 °. BBQ SNEAKY TURKEY BURGERS No one will guess these are turkey burgers - they look and taste like beef! Adding my beautiful Purple Puree of blueberries and spinach n ot only gives a sweet moistness to turkey burgers which can often be dry – and combined with tomato paste (the ultimate healthy ready-made puree) and seasoning make these burgers look and taste like the real thing! Pizza/Calzone Dough

Homemade Pizza/Calzone recipe my 10 y/o son will eat Mix in a small bowl and let sit/proof/bubble for 5 minutes or so : ¼ C hot water 1 TBSP yeast 1 TBSP sugar Then put these things in your mixer: 3 ½ C Flour 2 TBSP Oregano (crush/roll between hands before you put it in) 1 tsp garlic salt 2 TBSP garlic ¼  C olive oil ¼ C Parmesan  cheese Next add the yeast mixture and another  ¾ C. warm water.  Then I just let it mix for 5-10 minutes.  If it's sticky, I add more flour in until it isn't. This recipe will make 2 pizza crusts if you use regular size cookie sheets.  We use a jelly roll pan + a round pizza stone.  Son gets the stone pizza.  We roll them out pretty thin, because while I LOVE deep dish, it doesn't work well with my post gastric bypass stomach.  Hubs is on a diet, and son prefers thinner crust on homemade.
